Vegetarian recipe: Simple to make, simply delicious to enjoy
This is my idea of a perfect vegetarian recipe: Easy, delicious, and healthy.
And it doesn’t hurt that you can make this in minutes.
(And it really doesn’t hurt that this is one of the vegetarians recipes you can serve to your kids and your company!)
Vegetarian recipe: Lemon and Tarragon Carrots
From Keeping It Simple

1 lb, 5 oz. carrots, peeled and sliced into rounds
1 oz. melted butter
1 tsp. sugar
Zest of ½ lemon, finely grated
Coarse sea salt and pepper
1 heaping teaspoon chopped fresh tarragon
squeeze of fresh lemon juice
Cook the carrots in a pan of boiling salted water until tender, then drain well and return to the pan.
Meanwhile, mix together the butter, sugar, and lemon zest. Stir the flavored butter into the carrots, seasoning to taste with salt and pepper. Finish with the tarragon and the lemon juice. Serve warm.

yum, this sounds like a great recipe. there are tons of carrots at the farmer's markets these days, and tarragon in my garden that i've yet to find a use for. how perfect!
